I've made this using just the pork sausage for a breakfast serving 20 people. we refer to this recipe by no name other then christmas breakfast and have it every year. instead of sausage we use strips of bacon. according to a commenter on another breakfast casserole recipe on this site, yes you can make ahead and freeze.
